Jigaroma powdered lime provides an intense bitterness and fresh acidity, ideal for professional food and culinary applications.

Our powder is inspired by the traditional Loomi (whole dried lime), prized for its complex acidity. However, the traditional method involves brining and slow drying (often in the sun), which oxidizes the fruit and often makes the final powder unstable. The powder gives the sensation of having the fruit fresh, just picked.

Thanks to D.I.C technology, we dry the whole fruit much faster. This process prevents excessive fermentation and oxidation, preserving the citrus's raw vibrancy. The result is a 100% natural powder with exceptional aromatic intensity, and stability and flowability that exceed market standards.

A powerful, direct and sharp aromatic profile. The complexity of the whole fruit (bitterness of the zest + acidity of the juice) is present, with slightly earthy notes.

Improved Powder Hold

Unlike traditional lemon powders, which are often highly hygroscopic (and tend to clump), the D.I.C rapid drying process gives the powder a stable, porous structure. This results in better consistency and facilitates industrial dosing and homogeneous mixing in dry spice blends (such as rubs).
